Sweet Coconut Roti

Ingredients for Stuffing

2 tsp ghee
2 cups of Dry grated/powdered coconut
1 cup Jaggery
you can add finely grated dry fruits of your choice.

For Dough

1 cup All purpose Flour
1 cup wheat flour
3 tsp oil
1 cup of water
pinch of salt
Knead the flour into a soft chapatti dough.

Procedure

Take a pan add 2 tsp of ghee. Once the ghee is heated add 1 cup jaggery and stir continuously.
The jaggery will start melting see that there are no lumps left. Now add the dry coconut powder and dry fruit powder to it and mix well. Do not cook any more. Trun off the gas stove and wait for the mixture to cool down.

Now take the kneaded dough of lemon size and roll it. Now fill the stuffing into it and pack it well and roll again to get small roti. Now roast this roti on non stick tawa with oil or ghee.

Delicious Sweet Coconut Pancake is ready to eat.

Note: If your stuffing mixture turns hard on cooling then just grind it to powder again.


Gauva Gojju

Ingredients

1 Ripe Gauva(Peru/Amrudh)  Roughly Chopped
2 tsp Jaggery        
1 tsp Mustard Seeds (Rai)
1 tsp Cumin (Jeera)
Pinch of turmeric
2 tsp Sambhar powder
1 tsp Amchur or Tamraind Paste
3 tsp Oil
Pinch of Asafoetida (Hing)
1 cup water
salt as per taste

Procedure
Take a pan, pour 3 tsp of oil . once the oil is heated add mustard seeds wait for them to crackle.  Now add 1 tsp of cumin and a pinch of asafoetida(Hing). Next add  roughly chopped guava  pieces and fry for a minute. Put a pinch of turmeric(haldi) along with 2 Tsp of Sāmbhar powder, 2 tsp of Ja
ggery and salt as per taste and fry again for a minute. Now add a cup of water and let it simmer for 2 minutes.

The mouth watering Chatpatta Gauva Gojju is ready to eat. Eat it with hot steamed rice or Roti.

Mango Gojju

Ingredients

1 Ripe Thotapuri Mango  Roughly Chopped
2 tsp Jaggery         
1 tsp Mustard Seeds (Rai)
1 tsp Cumin (Jeera)
Pinch of turmeric
2 tsp Sambhar powder
1 tsp Amchur or Tamraind Paste
3 tsp Oil
Pinch of Asafoetida (Hing)
1 cup water
salt as per taste

Procedure

Gajar ka Halwa ( Instant)


Ingredients
5 Grated Carrots
50gms Milk Powder
100 gms Sugar
1Cup Milk
1 tsp ghee
10 kaju 
10 Badam
Procedure
Take a pan , once heated add 1 tsp ghee , then add the roughly crushed dry fruits. Fry them for about 30 Seconds and add the grated carrots and fry them on a medium flame for 5 Mins. Now add the sugar and stir continuously. Next mix the milk powder in a lukewarm milk and add this milk to the pan. Let it cook for say 5 more mins. The mouthwatering Gajar ka Halwa is ready to serve.

Mixed Halwa

Ingredients
1 cup gram flour ( besan)
1 cup wheat flour ( atta)
1 cup  semolina ( Suji )
1 cup ghee
2 cups of sugar
3 cups of hot water
Dry Fruits as per choice


Procedure
Take a thick pan and roast besan,atta and Suji together with ghee till it gives a good roasted aroma. Then add dry fruits and sugar and stir well. Now add hot water slowly and stir continuously and let it simmer for about 5 more minutes. Hot mouth watering halwa is ready to serve.




Oreo Cream Biscuit Cake

Ingredients
Oreo Cream Biscuits 2 packs
Any cold drink  200 ml
Dry Fruits as per your choice
Olive oil 2tsp
Baking powder/ soda 1/4 tsp
Fresh cream 1 tsp

Procedure
Grind the Biscuits. Take a mixing bowl and add all the above ingredients except cold drink and mix well . Now add cold drink  little by little till the consistency of dough is like a think batter. Grease a any micro oven proof bowl and pour the batter and microwave it for 3 to 4 mins. Check with the tooth pick if it is cooked. Now decorate according to your choice with cream chocolates dry fruits etc.

Aravi Ke Papad

Aravi Papad

Ingredients
250 gm Aravi
Gram flour as required for the dough.
1 tsp Ajjwain
2 tsp chilli powder
1/2 tsp turmeric powder
3 tsp oil
Salt as per taste
Oil for deep frying

Procedure

Boil the Aravi in a cooker  for about 6 to 7 whistles. Let it cool. Now take a bowl peel the Aravi and mash them add the all the above ingredients. Add slowly the gram flour mix well and knead the dough to roti consistency. Now take little dough and roll it  later with the help of round shape lid or steel katori cut them uniformly and dry them on a sheet. Once you have rolled all the dough into small roti's . Heat the oil in a pan and deep fry them on a medium flame till they turn golden brown. Now the tasty crispy Aravi Papad  is ready to eat.

Rice Chakali

Simple Rice Chakkali
Ingredients
4 cups rice flour
1 cup bhuna channa/ daalia dal powder
1 tsp of Thill
2 tsp of red chilli powder or green chilli paste
2 tsp ghee or oil or butter
Salt as per taste
For flavor you can add 10 cloves of garlic paste.
Oil for deep

Procedure
Mix all the above ingredients and make a dough of chapatti consistency. Now with the help of Chakkali mould make chakkalis and deep fry them on a medium flame till they trun golden brown.
Enjoy crunchy chakkalis .

Carrot Bhindi

Ingredients
1/2 kilo ladyfingers ( bhindi).      
2 carrots roughly grated
1 tsp red chilli powder
1 tsp coriander powder
1/2 tsp turmeric powder
Handful of coriander leaves
3tsp oil
1tsp jeera
Salt as per taste

Procedure
 Cut the ladyfingers into vertically slices of 1 inches each. Heat a pan with oil and add jeera to it. Now add the sliced ladyfingers to the pan and fry them till they are cooked. Once they are half cooked add turmeric , chilli coriander powder and salt and fry for another 3 minutes. Now it's time to add the roughly grated carrot to the pan and cook for another 3 minutes and garnish it with handful of coriander leaves. Serve hot colorful carrot bhindi sabji with roti or Parantas and enjoy the taste.

Creative Cutlets

Ingredients
                                                                                 
The leftovers of last night
Like rice roti khichadi vegetables chutney etc.  
6 slices bread crump
2 finely chopped onions
Handful of finely chopped coriander
1 tsp chaat masala
1 tsp channa masala
1 tsp red chilli powder
Salt as per taste
Suji for coating
Little oil for greasing pan or tawa

Procedure

Mix all the above mentioned ingredients and give shape to cutlets of your choice and coat them with Suji and fry them on a greased tawa or pan till it turns to golden brown. Now serve the hot delicious Creative Cutlets with tomato sauce of ketchup.

Wheat Atta Upma

Ingredients

1 bowl of wheat atta
2 onions finely chopped
4 green chillies sliced
1/2 tsp musturd seeds
1/2 tsp jeera
2 bowl hot water
3 tsp lime juice
1 tsp sugar
salt as per taste
corriander for garnishing

Preparation

Take a pan once the pan is heated add 1 bowl of wheat atta and fry on a low flame till it gives you a nice smell. Now take another pan add oil, once oil is heated add musturd seeds, jeera,chopped onions and green chillies fry them till they are half cooked,now add the wheat atta and fry for a minute add salt and sugar and stir well.now take the hot water and slowly add to the pan stiring continously.Do not add  to much of water just add as required for upma so that wheat atta gets cooked.close the lid and cook for 2 to 3 minutes. take it out of the flame add lime juice and corriander leaves and mix well and serve it hot.

Bread Upma

Ingredients

6 slices of bread crushed roughly
2 tsp oil
1/2 tsp musturd seeds
1/2 tsp jeera
2 onions finely chopped
1 capsium finely chopped
1 carrot grated
1/2 red chilli powder
1/2 tsp Cumin powder
2 tsp water
salt as per taste
corriander leaves for garnishing

Preparation

Take a pan add 2 tsp of oil, once oil is heated add musturd seeds,let the musturds crackle then add jeera, now add onions,
Capsicum and the grated carrot and fry them till they are cooked. Add red chilli powder and cumin powder, stir well,now add the bread crumps and saltas per your taste and mix well. sprinkle some water and close the lid of the pan and cook for one minute. Garnish the dish with corriander leaves and serve hot.    







Suji ka Kheer

Ingredients

1 liter Milk
150 gms sugar
2 tsp of Suji or Rawa
2 tsp of ghee
1 tsp of Milk Masala 
crushed dry fruits
Kesar for Garnishing

Preparation

Boil the milk for 10 minutes. Take a small pan and add 2tsp of ghee,once heated add the 2 tsp of suji and crushed dry fruits and fry for a minute,now add this complete mixture to the boiling milk and 1 tsp of milk masala and cook for another 5to10 minutes.Garnish with kesar and the suji kheer is ready to serve. You can serve it hot or cold as per ones prefference.
